Atole de Elote


Where I lived in Garden Grove there is a Salvadorian restaurant that has the yummiest Atol de Elote. I didn't know they served it (don't think its even on the menu) until  I went with some of my cousins one day. My cousin Evelyn ordered it. She let me try hers...it was delicioso. I really liked it...I like sweet corn anything: sweet corn tamales(con crema), corn bread, sweet corn itself or in the form of this corn based thick drink- atole- making it a double corn drink.
We had plenty of frozen Peaches and Cream Corn that we got on sale.

Recipe
(I measured nothing)
I used frozen sweet corn and since it was frozen, I poured some in a small pot with water to thaw. Adding also a stick of cinnamon- cinnamon is just the best!

After the corn was nice and soft, I put it in the blender with the bit of water minus the cinnamon stick. but added about 2 tbs of Maseca or you can use already prepared masa. *tip start with a little...you can always pour some of the mixture back in the blender and add more thickening agent...but be sure its blended well before pouring back to the hot pot or you will get big clumps of masa.

Take mixture back to the pot, add  brown sugar and milk....I used 1% milk...for best results use whole milk or closer to whole...low fat. Stir until it comes to a boil


Variation
  • Use creamed corn in a can (2) 
  • Piloncillo



Heat  a cone of piloncillo in a pot with a little bit of water...once dissolved, add milk (about a liter and 1/2) and cinnamon stick bring to a light boil. 

Laddle some of the liquid into blender(be very careful as it can cause an explosion,so not a lot) and add masa or maseca or Maizena(vanillla, or nut flavor) and one can of the creamed corn.

Then bring it back to the pot that has the  remainder of the liquid and stir in the 2nd can of creamed corn, Stir, stir, stir, until it comes to a boil
This one will have more texture because of the Creamed corn.. Heads up-,: it will thicken more as it cools.
